Ingredients
- 1.5 Cups Tapioca Flour
- 2/3 Cup Milk
- 1/3 Cup Olive Oil
- 1/3 Cup Cheddar Cheese – shredded
- 1/3 Cup Mozzarella – shredded
- 1 Egg
- 1 Tsp Salt
Directions
- Pre-heat the oven to 400 degrees F.
- Grease a mini muffin pan.
- Combine all of the ingredients into a food processor and pulse until smooth.
- Pour the batter into the mini muffin tins up to about 3/4 of the way to the top.
- Bake for 16 to 18 minutes and cool them on a rack, but not too long they are best served warm. Enjoy!
