Sloppy Buffalo

Ingredients

  • 1 Lb Ground Chicken
  • 1/2 Medium Onion – Diced
  • 2 Celery Stalks – Diced
  • 1 Medium Carrot – Peeled and Grated
  • 2 Garlic Cloves – Minced
  • 3/4 Cup Tomatoes – Crushed (Can)
  • 3/4 Cup Buffalo Sauce (Your brand of choice)
  • 2 Tsp Worcestershire
  • 1/4 Tsp Paprika
  • Salt
  • Ground Black Pepper
  • Blue Cheese Crumbles
  • Buttermilk Ranch Dressing
  • 6 Buns

Directions

  1. In a medium sauté pan, heat 1 Tbs of oil over medium heat.
  2. Add the onions, celery, and carrots. Season with the a pinch of salt, black pepper, and paprika and sauté for 3 to 5 minutes. Then add the garlic and sauté for another 2 minutes.
  3. Add the chicken in the sauté pan and season with a pinch of salt and pepper. While the chicken is cooking, break it into small pieces, cooking the chicken through, about 5 to 7 minutes.
  4. Add the crushed tomato and mix, cooking for another 2 to 3 minutes.
  5. Stir in the buffalo sauce and Worcestershire. Bring to a simmer for about 20 minutes to reduce.
  6. Assemble your Sloppy Buffalo by placing the cooked chicken mixture on the bottom of the bun, top with blue cheese and buttermilk ranch dressing and enjoy!

Sloppy Gia

Ingredients

  • 1 Lb Ground Chicken
  • 1 1/2 Cup Marinara (or brand of your choice)
  • 1 Cup White Onion – Diced
  • 2 Tbs Tomato Paste
  • 1/4 Cup Parmesan – Grated
  • 1 Tbs Garlic – Minced
  • 1 Tbs Italian Seasoning
  • 2 Tbs Fresh Basil – Chopped
  • 1/2 Tsp Salt
  • 1/2 Tsp Ground Black Pepper
  • 6 Brioche Buns
  • Garlic Butter
  • Mozzarella – Shredded

Directions

  1. Pre-heat your oven to high broil.
  2. In a medium sauté pan, heat 1 Tbs of oil over medium heat.
  3. Place the chicken in the sauté pan, add the italian seasoning, salt, and pepper.
  4. While the chicken is cooking, break it into small pieces, add the onions and garlic, and cook through, about 7 to 10 minutes.
  5. Add the tomato paste and mix, cooking for another 2 to 3 minutes.
  6. Stir in the marinara, fresh basil, and parmesan. Bring to a simmer for about 2 to 4 minutes.
  7. While the mixture simmers, top both sides of the brioche buns with a spread of garlic butter and place them butter side up on an aluminum foil lined baking pan.
  8. Place in the oven on broil about 6 inches below the broiler, around the second tallest oven rack and toast the buns, about 2 to 4 minutes.
  9. Keep an eye on the buns to ensure they do not burn.
  10. Assemble your Sloppy Gia (think sloppy joe chicken parmesan style) by placing the cooked chicken mixture on the bottom of the bun, top with shredded mozzarella, and enjoy!

Sloppy Alice

Ingredients

  • 1 Lb Ground Chicken
  • 10 Bacon Strips
  • 2 Cups Button Mushrooms – Chopped
  • 2 Cup Shredded Jack Cheese
  • 1 Cup Honey Mustard
  • 2 Tbs Ketchup

Chicken Seasoning

  • 1/2 Tsp Salt
  • 1/2 Tsp Ground Black Pepper
  • 1/2 Tsp Paprika
  • 1/2 Tsp Dried Parsley
  • 1/4 Tsp Ground Garlic
  • 1/4 Tsp Ground Onion

Sandwich

  • 6 Potato Hamburger Buns

Directions

  1. Pre-heat your oven to 400 degrees (f).
  2. In an aluminum lined baking sheet, bake the 10 strips (or more) of bacon for 16 minutes or more to your desired doneness.
  3. Remove the bacon and place them on paper towels to drain the grease.
  4. Take 6 strips of the bacon, chop them up, and set aside. Take the other 4 strips and chop them into small pieces separately.
  5. In a medium sauté pan, heat 1 Tbs of oil over medium heat.
  6. Place the chicken to the sauté pan, add the seasonings to your ground chicken and break the chicken up into small pieces (like taco meat) while it cooks.
  7. While the chicken is cooking, add the mushrooms, and cook the chicken through, about 7 to 10 minutes.
  8. Once the chicken and mushrooms are cooked through, add the honey mustard, ketchup, 1/2 Cup of the cheese, and 4 chopped strips of bacon.
  9. Remove from the heat and stir to combine to melt the cheese.
  10. Once everything is combined and melted, toast your buns.
  11. Assemble your Sloppy Alice. Place a layer of the chicken, top with pieces from the other 6 strips of chopped bacon and remaining cheese.
  12. Serve and enjoy!

NOTE: You can always add or subtract the amount of bacon and honey mustard!!
