diced<\/li><li>2 Jalapenos &#8211; seeded, diced<\/li><li>1 1\/2 Cup Sour Cream<\/li><li>1\/4 Cup Mayo<\/li><li>1 Lime &#8211; Zest<\/li><li>2 Limes &#8211; Juice<\/li><li>1\/3 Cup Water<\/li><li>1 Cup Shredded Monterey Jack &#8211; fresh is better than prepackaged<\/li><li>1\/4 Cup Cotija Cheese &#8211; crumbled<\/li><li>1\/2 Cup Chopped Cilantro<\/li><li>1 Tsp Cumin<\/li><li>1 Tsp Chili Powder<\/li><li>1 Tsp Cayenne<\/li><li>1 Tsp Paprika<\/li><li>1 Tsp Dried Oregano<\/li><li>1\/2 Tsp Garlic Powder<\/li><li>1\/2 Tsp Onion Powder<\/li><li>1\/2 Tsp Ground Black Pepper<\/li><li>1\/2 Tsp Salt<\/li><\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><span style=\"text-decoration: underline;\">Directions<\/span><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Drain the can of corn and saut\u00e9 in a pan on med-high heat for 3 to 5 minutes with the diced red onion, diced jalapenos, 1\/4 Tsp cumin, and a pinch of salt and ground black pepper.<\/li><li>Set aside the saut\u00e9ed corn mixture to cool and place it in the refrigerator to chill (about 1 hour).<\/li><li>Combine the chilled corn mixture with the remaining ingredients and mix well (save a little cilantro to top before serving).<\/li><li>Chill in the refrigerator before serving (2 hours to overnight), the longer the better.<\/li><li>Adjust seasonings to your taste after it sets.<\/li><li>Place in your choice of container, top with remaining cilantro, serve with your favorite chips and enjoy!<\/li><\/ol>\n","protected":false},"excerpt":{"rendered":"<p>Ingredients 11 Oz Can Mexican Style Corn 1\/2 Cup Red Onion &#8211;
